ZUCCHINI BREAD

(Makes 2 Loaves)

3 Eggs
1 Cup Vegetable Oil
2 Cups Sugar
2 Cups Grated Zucchini
2 tsp. Vanilla
3 Cups Bread Flour
3 tsp. Ground Cinnamon
1 tsp. Baking Soda
1/4 tsp. Baking Powder
1 tsp. Salt

Preheat oven to 325ºF. Grease and flour two 8" x 4" loaf pans.

In a large bowl or standmixer, beat eggs until frothy. Mix in the oil and sugar. Stir in the zucchini and vanilla.

Combine flour, cinnamon, soda, baking powder and salt. Stir into egg mixture. Divide batter into the two pans.

Bake 60-70 minutes til done.
