ORANGE POPPY SEED CAKE


3 Cups Bread Flour
2 Cups Granulated Sugar
1/4 Cup Poppy Seeds
2 tsp Baking Powder
1/4 tsp Salt
1/2 tsp Almond Extract
1 Cup Cooking Oil (like Canola)
3 Eggs
3/4 Cup Milk
2 tsp Shredded Orange Peel (use a zester or microplane)
1/2 Cup Orange Juice
1 Cup Shredded Coconut (optional)

Mix everything together and pour into a greased and floured bundt pan. Bake in a preheated oven at 350ºF for 50 minutes until a toothpick inserted in the middle comes out clean. Let cool 10 minutes in pan after removing from oven, then remove from pan. Place on a cake plate and glaze.

GLAZE:

1 Cup Powdered Sugar
4 tsp Orange Juice

Mix well and pour over cake.
